Résumé: This chapter describes 3 aspects of the interrelations between fatty acids (FA), gastrointestinal (GIT) microbial flora, and human health: (i) what is known about the lipid requirements of bacteria and, in particular, the role that dietary FAs play on the GIT microbiota (including probiotic bacteria), (ii) how GIT bacteria modify lipids critical in FA metabolism, and (iii) clinical trials that show how changes in the dietary fat content impact the gut microbiota and how this, in turn, influences the health and well-being of the host, with a focus on cancer and obesity
