Résumé: Tomato producers could use non-destructive rapid on-line or at-line analytical methods to measure physicochemical properties of tomatoes for grading and quality control. A vis-NIR reflectance spectroscopy combined with chemometrics is shown to be useful for predicting the colour, firmness and lycopene content of tomatoes. However, it was not so good for the prediction of pH, total soluble solids and titratable acidity.
